The British are Invading and Bringing Great Music!

In 1964, The Beatles led the British Invasion with multiple chart-topping hits, starting with their first US number-one, "I Want to Hold Your Hand". Key 1964 songs included "She Loves You," "Can't Buy Me Love," "I Saw Her Standing There," "All My Loving," and "A Hard Day's Night," dominating the Billboard Hot 100. Their first live appearance on The Ed Sullivan Show is widely cited as the official start of the invasion.

We chose a fan favorite from the '60's for this month's recipe. If you are lucky enough to have a TV tray, set it up in front of your favorite show, pour a cup of your favorite tea, and get transported back in time!

Groovy Meatball Stroganoff
-20g protein per serving-
Ingredients
3 cups uncooked egg noodles
1 tablespoon olive oil
1 12 ounces frozen fully cooked Italian meatballs, thawed
1-1/2 cups beef broth (I like Kitchen Basics)
2 tsp chopped parsley flakes, plus a pinch for garnish
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
pinch of crushed red pepper
1 cup heavy whipping cream
3/4 cup sour cream-do not use low-
fat
Directions
Cook egg noodles according to package directions for al dente; drain.
Meanwhile, in a large skillet, heat oil over medium-high heat. Brown meatballs; remove from pan. Add broth, stirring to loosen browned bits from the pan. Add seasonings. Bring to a boil; cook until liquid is reduced to 1/2 cup, 5-7 minutes.
Add meatballs, noodles and cream. Bring to a boil. Reduce heat; simmer, covered, until slightly thickened, 3-5 minutes. Stir in sour cream; heat through.
Serve on a warmed plate and garnish with fresh parsley.
